Our weight fluctuates throughout the day, so I am sure you are all basically maintaining your goal weight for the most part, especially if you are within a few pounds! I can't make the same case if it differs by 10 pounds, though ;p
I have been maintaining my weight fairly well for the last couple of years. I am still trying to keep on weight and gain weight. I got close to my goal weight, but it's hard for me to keep it, so I usually stay a few pounds shy of it. I do feel better having more weight on my bones! I'm still considered underweight, though, but not as bad as before at least.
I am skinny because I struggle with a mixture of autoimmune diseases and mental health issues. Anxiety/depression makes me lose my appetite, so it can be a double whammy. My anxiety has been staying well-controlled, so I think it has helped me keep on my weight :-)
Now I am starting to exercise as well and increasing my calories so I don't lose the weight!

You have good determination. That will always pull you through.
Hm, I weigh myself maybe once a month if that. I mainly just look in a mirror and see if I am looking too thin or like I am going up in weight too quickly, then I weigh myself to confirm. Sudden weight gain/loss sometimes helps me to know if I may need to go to the doctor for blood work. My thyroid levels go up and down constantly, so it can be a good indicator that something is wrong for me, but usually that is if my levels stay high or low for a longer period than just a few days.
I find tracking calories keeps me pretty consistent otherwise, if my health allows for it lol it took me a while to figure out what amounts my body needed to stop losing weight, and then I just adjust accordingly over time if I require more or less to maintain the same weight.
I need to drink water/liquid much more..... I am bad with that because I hardly feel thirsty. I have a feeling I am borderline dehydrated most of the time! It can worsen fatigue.
