Growing up, there were only two things I didn't like...raw onions and Brussels sprouts, which my mom tried to force upon me almost every. single. day. Hubby and I trade the cucumbers and sliced onions when we're served side salads prepared with them.
About 10-12 years ago, we went out to eat at a place that serves small plates. Their best-seller was the Brussels sprouts. I figured, there must be a reason for that, so I decided to give them a try...they were wonderful! Since then, I've made salads out of them (raw) and roasted them. I gave them a try when a restaurant offered them up, deep-fried, as an appetizer.
I guess, my palate matured. I'm gaining an appreciation for Brussels sprouts, but I still don't like raw onions...though I don't have a cow if a slice finds its way on a burger or sandwich.
I can be okay with even the ones I don't like if they are hidden really well or smothered in a sauce that takes over their flavors, but I still tend to avoid them, and I will not cook with them... but I won't fully avoid them if they happen to be in something else I'm willing to try. For example, Shepard's pie.. many recipes have peas in it, and I'll still eat it because I like everything else lol

I used to be like that with mushrooms. I couldn't stand them when I was little but always have them handy now and often pop one in my mouth when I open the fridge for something else.
Cucumbers are refreshing.. and I like pickles, too.
Beets are a bit weird... but they can be okay in things. I ate a beet hummus that was surprisingly really good lol of course, they mostly covered up the beet flavor, but it had the nice color to it.

I like the beets color though, there is a purple dragon fruit here and it's so purple, heyy, this site is also purple too.

It's funny you mention mushrooms. Growing up, one of my favorite soups was Campbell's Cream of Mushroom. Now, I dislike it. I don't know whether they changed the recipe or my palate matured. I do enjoy the Cream of Mushroom Soup prepared at The French Kitchen here and often buy a frozen quart. Hubby doesn't like mushrooms, so it's all mine! LOL

I probably like just about every veggie as an adult (even though they didn't all please me growing up). It just depends how it's presented. For example, raw onions are a no, but fried? Yes, please!
