I have to cook something up tonight. I have chicken ready to go, but I don't know what I want to do with it. I did buy another new marinade to try.. I need to control myself before I have a bunch of opened bottles of sauce in the fridge lol
Today it is soup but my soup is more like a vegetable casserole. Not sparing on the herbs and spices either. I will look what vegetables look tasty and use them. We always have a good selection of fresh vegetables in. I am not vegetarian but don't eat a lot of meat.

When I make a stew or soup, I look for the most tired vegetables. My daughter used to call it "What's left at the bottom of the fridge stew."

Yes I do that too as I hate to waste anything. In my 'Full English Breakfast' type of lunch at the weekend I fried some old parsnips that have been drying themselves out for (literally) weeks.
Today I have got some trout out of the freezer. I cook it with tomatoes, herbs and spices in the microwave, which would be very bland but the herbs and spices help it well. This with the usual garlick toast. A very quick meal. It's only about a couple of days a week I tend to use the ordinary oven as I tend to be busy but, not cooking much meat either, I don't need it that often. Many of the meals I cook tend to be 'snacky' but they are almost always good fresh or frozen food, not prepacked junk.
