I have minced beef again today. I will probably start it off in a frying pan then add it to a pan of finely chopped vegetables for a stew / soup. I like it that way.

A bit of a mish-mash for our evening meal; mince, mixed beans in mild chilli sauce, kidney beans in water (drained and washed first), mushrooms, tomato puree, tomato sauce, spices, pepper, chicken stock cube. All to be eaten with boiled potatoes, butternut squash and sweet potatoes.
I have prepared it all and it is simmering on the gas hob, ready for when Sophia gets in from work

We'll probably do Taco Tuesday for supper, since I discovered a couple months ago that they'll eat tacos now! (They were pickier eaters years ago, now more adventurous. Yay!)

Evening meal is going to be a reheat of yesterday's evening meal.
The accompanying butternut squash this time is not from a packet (didn't have any of those left in the freezer), so it was a full one to be chopped up.
Yikes! They are hard work. I peeled the skin off first, then even using our sharpest knife it takes some effort to chop it into small chunks
It won't take long to cook, so I will have it ready for Sophia coming home from work

I've been having oatmeal lately for breakfast. Good start to the day, and I use a protein powder in it as well. (With some peanut butter powder mixed in. Yum!)
It felt cool at lunch today with it being cloudy and rainy, so I heated up broccoli & cheese soup, with roast beef as well.
And today was our brinner day, so we had pancakes for supper, with fruit and individual protein choices (peanut butter, egg, cottage cheese, etc.).
I have just had my Saturday bread and butter sandwiches with my coffee. A treat today as it was a Tiger baguette. I have also had some slices of Madeira cake.

Ok so I cook my soup in an I or pressure cooker. # if you dont use an IP then you need to let the peas swell in water overnight then drain and cook the soup for about 4 hours on a very low heat.
2 tbs oil 1 onion large 2 -3 carrots peeled and diced 2 celery sticks diced 1.5 tsp sweet paprika 1/2 tsp sea salt ( adjust to taste) Freshly ground black pepper pinch of fresh ground mustard or a nice tsp of decent mustard.
450gr green split peas 2 ltrs water 1 bay leaf
Meat; lots of people add all sorts I like a decent 500gr of ham hock smoked and two nice sausages from the butcher. ( lots of people prefer the Dutch smoked sausage ' rookworst' I prefer real sausage) ------------------------------------------------------- selecting saute in the IP cut the sausage into slices and just let it brown slightly. Take the sausage out to one side, put the celery onion and carrot to the pan saute until the onion is soft. Add the herbs and spices the peas, the ham hock and sausage, plus the water, stir.
Cook at high pressure for 35 minutes and then allow natural release . if cooking on a stove top simmer for about 4 hours. Keeping an eye on the water.
After cooking discard bay leaf, lift out the ham hock which should fall to bits and shred it or chop (as is your preference) return to the pan stir it all again and serve hot.
